Sandra's comments:

      I use my crockpot most of the time, even out of the season, as it is quick and doesn't spoil anything.  Any recipes I have contributed here leave the quantities open in accordance with the family size.  I substitute lots of things in accordance with what I have in the cupboard or fridge as most of the time I have 10 minutes to prepare things for the evening meal, which I probably won't dish up. They are usually made before I go and hop on my tractor for the day, so I make them as complete as possible.

Crock Pot Wonders

International Chicken

Ingredients:
3 to 3 1/2 pounds chicken pieces,
1/4 cup all-purpose flour,
2 teaspoons salt,
1 1/2 teaspoons curry powder,
1/8 teaspoon ground black pepper,
1 cup chopped onion,
 1 medium green bell pepper, sliced into rings,
1/2 cup chopped apple,
1 large clove garlic crushed and minced,
1 can (14.5 ounces) diced tomatoes,
3 tablespoons cold water blended with 3 tablespoons all-purpose flour,

Serves 4 people.

Directions:
Rinse chicken and pat dry. Combine the 1/4 cup flour with salt, curry powder, and pepper. Dredge chicken with the seasoned flour mixture; place in slow cooker. Stir in chopped onion, bell pepper, apples, and garlic. Pour tomatoes over all. Cover and cook on LOW setting for 7 to 9 hours, until chicken is tender. Remove chicken to a heated platter.
Turn crockpot to HIGH setting. To thicken sauce, stir the water and flour mixture into the juices remaining in crockpot. Cover and cook on HIGH until thickened. Serve chicken with the sauce.

Cross cut Blade Steak

Ingredients:
Crosscut blade steak
1 or 2 onions
 1 pkt Mushroom soup

Preparation time:
About 5 minutes.  I have even used frozen meat successfully for this one, when I have forgotten to take meat out.

Directions:
Put steak in basin.  Add onions.  Sprinkle soup over (no liquid)  Place basin (uncovered) in a covered saucepan or crockpot of water & simmer 2-1/2-3hrs, or all day in crockpot.

Steak Fromage

Ingredients:
Rump or Fillet
3/4 cup grated cheese
salt & pepper
Milk
 1 onion sliced
 1 tbsp Worchester
 sauce
 1 tbsp butter

Preparation time:
5 mins. Another crockpot wonder.

Directions:
Cut steak into pieces. Place in baking dish. Cover with onion, cheese & sauce. Sprinkle with salt & pepper & add milk to depth of steak. Dot butter on cheese.
Bake 30-40 mins 150 deg C or put in crockpot.

Steak Marianne

Ingredients:
Porterhouse Steak
2-3 tbsp butter
3-4 onions chopped
1 c sliced mushrooms
1 tsp chopped parsley
1/4 c beef stock
 1 tsp salt
 1/2 tsp pepper
 3-4 slices bacon
 1/2 c cider
 1-1/2 c potatoes
 (cubed)

Preparation time:
10 minutes, I usually just prepare it all for the crockpot, and don't bother with the precooking.

 

Directions:
Saute steaks in butter (if you have the time or inclination) till brown. Add veges & cook a few minutes, then add salt, pepper, cider & stock. Bring to boil, then lower heat and simmer for 30 minutes. Thicken Liquid.
Failing that its into that trusty crockpot again, works just as well so long as the potatoes are cubed.

Sausage and Potato  Casserole

Ingredients:
Potatoes, peeled
Bacon
Butter
1/4 cup boiling water
Onions
Sausages
2tsp beef stock

Preparation time:
10 minutes.

Directions:
Slice the potatoes thinly and layer in the crockpot. Cut bacon  in small pieces. Melt butter in frying pan, add bacon and sliced onion and  cook until the onion is soft and golden (pays to do this for the onions  sake).  Drain well and arrange on top of potatoes in crockpot.
Brown  sausages (only if you have time) drain and arrange on top of the bacon and onion.
Dissolve beef stock in boiling water and pour over the ingredients  in the crockpot
Cover with lid and cook on low 7-9hrs  or high  3-4hrs.

Complete Meals

Beef and Vegetable  Loaf

Ingredients:
Mince
2 Eggs
Zucchini (or I use Kumara)
Tomato
 1-1/2 cups  Breadcrumbs
 Onion
 Carrot

Preparation time 10 minutes.   Another way to get the veges into the kids without them realising.   Another instant meal, courtesy of the Automatic oven.

Directions:
I will put the way I do this, as I  find it quicker
In  a food processor, grate or chop onion, kumara, and carrot, add eggs and  breadcrumbs (the breadcrumbs can be omitted if you don't have any) add  tomato (sauce will do) and lastly mince.
Press into loaf tin and cook in  moderate oven for 1-1/2 hrs.  Juices can be used for making gravy.   Can be unmoulded and returned to oven to brown.

Other Meals

Steak Surprise

Ingredients:

2 tbsp butter melted
1 pkt onion soup
3 tbsp red wine (I use cordial concentrate if the kids are eating it)
 pepper
 Flank steak
 1/4 c sliced  mushrooms

Preparation time:
10 minutes.  This time courtesy of the Automatic oven.

Directions:
Line baking dish with foil.  Melt butter & spread on foil.  Sprinkle 1/2 soup on foil.  Lay steak on, sprinkle with pepper & rest of soup.  Pour on wine, the sliced mushrooms & arrange on steak.  Fold in foil parcel, seal.
Bake 160 deg C for 1-1/4 hrs.  Serve with rice.
